Just wanted to give a heads up to fellow carrot cake lovers (and haters- this may be the one that wins you over) that I've found a truly special slice at my go-to Trinidadian bakery in Crown Heights- Royal Bakery on Nostrand Ave between Dean and Pacific (just south of Atlantic Ave). This place deserves to be on any best-of list, right alongside 2 Little Red Hens & Amy's Bread, as Royal's slice is very likely the best CC I've tasted ever. Their version is served by the oversized wedge and is boldly frosting-less. I thought I'd miss the cream cheese icing but this cake is so good, so moist and soft, so over-the-top delicious that you don't miss it at all. I love that there is no fork or plate required, no layers, no fuss to prevent you from taking big ol' bites from the brown paper bag as you walk down the street. Served up by friendly Trini ladies for the price of $1.75. Also available in giant frostingless wedges is their awesome banana-coconut cake, fruited and plain sponge cake which tastes the idea you're trying to capture when you make a home-made version of boxed yellow birthday cake, in the best possible way. Seriously, go to this bakery and get some carrot cake. It is a wonder.
