A friend had recommended the carnitas and the chicharrones here. They're housemade and the day's production is available for sale after 2pm daily. The pork-laden scent surrounding the market in the afternoon is absolutely intoxicating.
Both are kept in a hot box where customers can reach in with tongs to serve themselves. The chicharrones come in rind only, rind with some fat, and rind with a thin layer of meat. The carnitas are available in a range of cuts, including tongue, ears, ribs, skin, loin and more. I helped myself to some of the tongue, rib, skin (cuero) and rib pieces. These turned out to be on the leaner side and not as salty as other examples . . . maybe these are carnitas for the health-conscious. Price per pound was about $6.50.
