Caramel Conundrum

I’m making a sticky date pudding cake for a birthday tomorrow, and want to cover it with caramel buttercream frosting and drizzle caramel sauce over the side of the cake. I then started looking up recipes, and for all sticky date, the caramel recipe is by melting butter, brown sugar and cream etc together, instead of what I think of as caramel, which is melting water and sugar and when it gets amber to add the cream. What is the difference between these two and does the first kind taste better with sticky date cake? Thanks!
