Canuck Chowhounds on the loose

I shall be coming to your fair city by the Bay next month for four days from Toronto with my partner who has never been. I used to go many times in the 70's and 80's to visit a friend (now deceased) and of those trips I remember fondly, I frequented the many little oyster and shrimp bars through the city,the open kitchen style neighborhood Italian restaurants in the Noe Valley district (Little Italy was the name of one I think),the North Beach and of course the Tadich Grill. There also was a fantastic prix-fixe French resto called Le Piano Zinc at one time too, that I'm sure has long gone.
We are devoted foodies who like everything with Seafood/French/Italian at the top of thescale,Chinese,Japanese,Indonesian,Thai at the middle and Indian,Mexican,North American at the bottom. We would love to have a core three terrific "must go" recommendations of what you would consider the absolutely "die for finest at the moment culinary experience in the city" Anywhere a taxi goes we can go too... and thank goodness for Amex and Visa though often the very best isn't necessarily outrageously expensive. I thank you for any suggestions you might proffer and will happily report on them on this board when we return.
