Do cannoli shell recipes in Italy call for olive oil?

Does it vary depending on the recipe?I noticed some recipes for shells call for hydrogenated shortening, some call for butter and others call for olive oil for fat? I think the shells in the canolli kit I bought a couple of times was palm oil. I recently made fresh shells and used olive oil and it was delicous. Id rather use olive oil or palm oil then hydrogenated vegetable shortening, but butter sounds good.
