Canning/Preserving Question

For Christmas presents this year, I've decided to make an assortment of canned/prserved fruits and vegetables. I'm also consideringmaking more decadent items like hot fudge sauce, butterscotch sauce, etc. but am unsure about the shelf life of these items. Is it safe to seal them in a water bath, the same as for fruits? Do they need to be refrigerated afterwards? How long will they last?
