Found a beautiful recipe involving canned pumpkin mixed with heavy cream and spices, layered with lady fingers, in an english trifle type bowl. My question, does the canned pumpkin have to be cooked? I am fanatical about bacteria and cooking stuff, but I can't find any indication on the can about pre-cooking. I know in order to prepare the pumpkins, they were surely cooked. But I'd like some reassurance. Happy Thanksgiving to all.
