Candy's Salt Cod

When you made the salt cod, how dry did it get after the three days? Was it like what you buy in stores? How long did you wait to use it afterwards? Did you store it in the fridge, or just in the pantry like when you buy it?
Sorry for all the questions, I'm just interested in doing it, because I find most salt cod bought in stores to be unacceptable. Thanks.
