I'm a Canadian transplanted to the Netherlands. I have the dreaded nut allergy which I can confirm thru lots of first hand experience includes peanuts and all tree nuts I've ever tried.
On the other hand, pine nuts and coconut are just fine with me. Go figure.
I'm trying to learn Indonesian cooking while I'm in the Netherlands. I notice several recipes call for candlenuts which are off limits to me. I'm looking for a substitute.
Macadamia nuts (the traditional substitute) are no help in they are of course also tree nuts.
Since the usual recipe calls for candle nuts to be roasted and ground, I was wondering if toasted pine nuts, roasted desiccated coconut, or even dried chick peas (or chick pea flour) would be reasonable substitutes. I know what each of these tastes and acts like, but I don't know what candlenuts are like in cooking.
Any hints from the trenches very much appreciated.
