my candied nuts have driven me....

over the edge?? nuts! crazy...almost to tears...

I make these buggers for my pals every christmas, but this year I'm have MAJOR ISSUES with chrystalization...in fact EVERY SINGLE BATCH has crystalized to some extent; can someone please give me a clue what's going wrong:

The details:
Combo of toasted almonds and pecans
White sugar and a bit of water set to boil until slightly yellow in color
Throw in nuts and combo of salt, pepper and spices
Put onto baking sheet and bake for about 10 minutes

I've noticed that they actually are becoming crystalized in the oven.

Initial culprits:
I don't stir my sugar mix until adding the nuts and spices
My pot is clean and sugar is new

If there was ever a "signature" thing that i make, these nuts are it, and i feel like my pen's been stolen.
