I made cornbread recently using cornmeal with the germ still in. Because of the coarse grind and the germ, the cornbread is a bit, um, chewy. It lacks the delicacy of a finer grind and, frankly, we just aren't eating it.
Soooo, I got to thinking that cornbread bread pudding would be good, but I've never (gasp) made bread pudding. Want to, though. I'd appreciate any tried and true cornbread pudding recipes or any good ideas. Thanks!
