My friends and my annual celebration of cake was yesterday. This year we had 9 people and between us, we made 15 cakes. We had 3 stand mixer stations set up and the two ovens going at 7am. All the cakes were done by 4:30 and we had them staged, shot, tasted, and packed in bakery boxes by 7pm. A long, exhausting, joyful day of barely controlled chaos.
S'mores cake -- graham cracker layer cake from Food52 (literally made from crushed graham crackers), filled with whipped chocolate ganache and frosted with torched marshmallow frosting.
Multi-coloured bundt cake -- red velvet, pink velvet and vanilla cakes. This didn't turn out quite the way I was anticipating, but it was a pretty result nonetheless. Note to self: pink batter turns brown when baked.
Almond breakfast cake with peaches -- from the Tartine Bakery cookbook. Really deep almond flavor.
Fraisier -- sponge cake filled with pistachio cream and straweberries, topped with crushed pistachios.
Torte gianduja -- chocolate hazelnut cake topped whipped cream and candied hazelnuts.
Espresso flan cake -- roux-based cake layer topped with espresso flan.
Duke cake -- from the Duchess Bakery cookbook. Deep chocolate cake filled with salted caramel ganache.
Chestnut cake -- molasses cake from Johnny Iuzzini, with chestnut paste and whipped cream.
Lady Baltimore cake -- RLB's white velvet cake, brushed with rosewater, and filled with nuts and rum-soaked raisins. Frosted with a rosewater meringue and torched.
Carrot cake -- topped with marzipan carrots.
Black forest cake -- filled with sour cherries and mascarpone whipped cream.
Ombre pandan cake -- 5 layers of pandan cake with different intensities of pandan extract. Filled with a gula melaka buttercream.
Chocolate mocha cake -- chocolate cake and mocha frosting.
Apple cake -- from Smitten Kitchen.
Adriano Zumbo's V8 cake -- crazy, intensive 8-layer cake from MasterChef Australia. 10+ hours of effort. My friend ran out of time to finish the outside decorating, but the cake was ridiculously good. Check out the recipe: http://tvnz.co.nz/masterchef-australi...
And that's it for this year. The take-home boxes were packed with deliciousness. My slices are now in the freezer, a delicious stash of home-baked cake!
