Cajun Corner

I think that Cajun Corner has been discussed before on the CH board. I'm on their mailing list and just got an email stating that they are open for take-out starting this week. Here's the menu for this week, until they decide on what's popular. If I was close-by, I think I'd be having lunch there every day. By the way, I haven't actually tried any of the food--I just go there to buy Creole mustard for cooking.

"Hi Everyone,
We're officially opening our take out kitchen this week with a soft launch of a few dishes each day. This way we'll see what people like best before we settle on a standard menu for the long haul.
Here's what we're serving this week:

Monday:
Red Beans and Rice $ 5.95
Slow cooked with smoky tasso ham, served over rice with a side of collard greens.

Chicken Gumbo with Okra $ 2.95 (8oz), $ 5.49 (16oz), $7.95 (24oz).
Cajun style gumbo thick with savoury chicken and silky okra.

Tuesday:
Shrimp Creole $6.95
Spicy stew of tomatoes, onions, celery and bell peppers, and generously swimming with plump shrimp. Served over rice.

Shrimp and Tasso File Gumbo $ 2.95 (8oz), $ 5.49 (16oz), $7.95 (24oz).
Silky smooth Creole style gumbo with seasoned shrimp and Smokey tasso, served over rice with a dusting of gumbo file.

Fried Catfish Po'boy $ 5.95
Fresh catfish lightly dusted, crispy fried, served on fresh baked french bread, dressed with remoulade, tomatoes and lettuce, garnished with spicy pickled green beans.

Wednesday:
Cajun Jambalaya $ 6.95
Spicy rice dish with chicken, andouille sausage and shrimp. Served with fresh french bread.

Gumbo D'Zerbes $ 2.95 (8oz), $ 5.49 (16oz), $7.95 (24oz).
Creole style green gumbo with spinach, collards, and mixed wild greens, served over rice with a dusting of gumbo file. This gumbo is meatless.

Fried Shrimp Po'Boy $5.95
Plump shrimp lightly dusted and crispy fried, served on fresh french bread, dressed as you like it with a side of spicy pickled green beans.

Thursday:
Louisiana Blackened Chicken $ 5.95
Tender boneless chicken thighs, properly blackened and served with dirty rice and collard greens.

Crab and Hominy Gumbo $ 2.95 (8oz), $ 5.49 (16oz), $7.95 (24oz).
Silky file gumbo thick with crab claw meat and sweet hominy corn

Muffaletta Sandwich $ 5.95
New Orleans's famous Italian sandwich of salami, ham, provolone and olive salad. Served with spicy pickled green beans.

Friday:
Southern Fried Catfish $6.95
Crispy, seasoned farm raised catfish, served with jalapeno hush puppies, remoulade and Louisiana Cabbage salad.

Gumbo Ya Ya $ 2.95 (8oz), $ 5.49 (16oz), $7.95 (24oz).
The traditional Friday gumbo (Ya Ya meaning "everything at once"). This bayou style gumbo has a little something for everyone including chicken, shrimp and andouille sausage.
