I'm interested in a Butchery (and/or Charcuterie) Class/Demonstration. Ideally, like a one-time Saturday morning or something? "Student" participation and "take home the spoils" would be a big plus. Whole hog, sheep, 1/2 steer type of thing would be great. MoCo location ideal, but will travel.
Will any fellow 'hounds please let me know if they hear of anything like this at a shop or a restaurant? Or if any restaurant owners are reading, ...you may want to hike up your insurance premiums and offer such a class.
