Now, here's a stumbler..

Burbot (the only freshwater member of the cod family) livers are a delicacy in many European cuisines. Burbot is also caught in Canada, and its liver is prized by native populations.

Anyone ever heard of burbot livers available anywhere in New York?

Monkfish livers have recently become fairly popular in Manhattan restaurants. It's high time we rediscovered burbot.
