Ok, I'm finally admitting it. I'm looking to brine a Christmas turkey...i skipped out on it for Thanksgiving, and had a dry bird (again!). I get convinced, then find as much against brining as I found for brining. I just read a blog (www.wtffd.com) and they say that brining isn't a great idea and have a link to another site (www.seriouseats.com) that agrees. But then I look at W-S site, and gourmet and they say brine is best!!! Sooo...are the two blog sites crazy, or are the big commercial sites.
