I have a 16 lb bird. I bought it from a local farm. The legs are stretched out and I'm having a hard time getting them to tuck in.
To compensate, I've got a large stock pot (as tall as my fingertips to my elbow) in which the bird can almost fit.
The recipe I have for the brine is 1 cup salt and 1 gallon water. My guess is that this pot is 12 gallons.
I'm eyeballing that to submerge the bird, I need 4 gallons of water or so.
My question is do I use the proportion of water to salt that is in the original mix? I.e., do I use 4 cups of salt for the 4 gallons of water?
