Breading for Schnitzel or Chicken Cutlet

I love a crispy outer crust. Normally I salt and pepper the cutlet, dredge the cutlet in flour, then dip in egg, then coat in my own seasoned bread crumbs. I fry immersed in pan of canola oil (health reasons) at 350 exaclty.

I am wondering if there is a better way for an interesting crust?
