I'm surprised that I have not seen any reviews of the new Thomas Keller Bouchon Bakery. So I went yesterday and I bought two things:
Their Campagne, is a large round loaf of about 4 pounds ($12 for the whole or $4 for 1/4)that is similar to the large Acme Levain. It is beautiful and really delicious. The texture is very nice, rubbery with a nice cell structure, albeit this loaf was a bit too moist, and perhaps it does not have the depth of flavor or complexity of the Acme Levain. I also wish Bouchon was closer to the Acme in price, but that's the story of the Napa Valley. Nonetheless, the Bouchon Campagna is a bread that I am proud to have on my table.
I also bought a couple of Rustique rolls which are like Ciabatta. These were very good, but since I am not a big fan of Ciabatta I'll let someone else go into their fine points.
