Bookclub menu - need sorbet flavor and 3rd salad

I'm hosting book club in just over a week, and have it in my head to do three lovely salads (no mayo) and three sorbets/ice creams with the rosemary biscotti recipe I'm desperately searching for. Here's what I've got so far for salads: the Nigella Watermelon feta salad of recent Chowhound acclaim, a light (or heavier, depending on salad #3) pasta salad with ricotta salata, lots of fresh basil, tomatoes, etc, and for dessert: Carb Lover's delicious strawberry balsamic gelatto, and Ana Sortun's almond ice milk recipe that ran in the Times this week (unless someone cautions me against it). I'm looking for a third salad (a whole grain/roasted chix and veggie combo? My mind draws a blank here), and also a third iced item for dessert. I was thinking some sort of sorbet would be lovely to complement the two "creamy" options I've already got, but I'm stuck as to the flavor. Lemon thyme? Basil? Additionally, if I can't find the rosemary biscotti recipe, I'll need a light delicate cookie to complement the desserts.
