I need to make a large quantity of chicken stock. To save money, I'd prefer to primarily use backs and necks, plus a whole chicken or so. Ha! I've called 3 butchers who say they can supply practically nothing. I guess they buy their chickens pre-processed by Frank Perdue like all the groceries do.
Anyplace in Manhattan -- preferably downtown -- that can reliably supply me several pounds of chicken bones??? I'd even try to navigate a Chinatown butcher if necessary.
