Bologna in late April for two nights

We've added two nights in Bologna on our trip to Italy during Easter week, but it seems I've waited too late to make plans as I'm having difficulty securing reservations, even on weeknights (Tues-Wed). We're staying in a hotel, so unfortunately no kitchen. We don't need anything especially family-friendly as we are traveling with a teen who eats nearly everything, but that means we're not looking for anything particularly romantic either.

I've searched and read through many posts, but would love to hear about any recent experiences. I'd also appreciate direction on specific recommended dishes at places, if you have any. I'm not particularly interested in places geared towards students and would pay for quality over quantity. We will have at least one lunch and two dinners in Bologna. No car, as we arrive and depart by train. Sadly, All'Osteria Bottega does not seem to have availability during our stay. None of us speak Italian, so haven't tried calling Trattoria di via Serra.

I've reached out to Caminetto d'Oro (for tagliatelle al ragu) and hope I may have luck getting a table there.

I'm now trying to reach out to all of the following:
Da Gianni - grilled mortadella; have read mixed messages on the pasta here
Da Nello
Nonna Gigia (couldn't find anything on CH!)
Serghei - passatelli, secondi

Open to alternative suggestions as well.

Would we be able to bring a teen with us to Osteria del Sole?

Considering doing a food tour, but may depend on our ability (or inability) to make dinner reservations. Not interested in a cooking class, and as we are a family of color, honestly don't feel comfortable doing a home meal (Cesarine).
