Bobolink is a cheese dairy which sells its wares at the Union Square greenmarket, and does a mail order business. I got my 3rd mail order yesterday, and that's the last time. Having been at Bobolink and seeing what they're about, I tried again and again...but the cheese is just in terrible shape, every time. And frankly, not nearly as good as the price they ask would suggest. This time I opened a couple of the cheeses and they looked like they've been drying out for weeks. Sour, huge think discolored sections (and I don't mean in a goodway)...just plain bad. I did enjoy the cheeses when we had them on site, but that's the only time, and even then it wasn't *that* good. The fresh mozzarella that he made in front of us was as dull as it gets, for example. I just don't understand what the big fuss is anyway - the cheese is okay, but perhaps they're given "consideration" because of the real effort to do organic farming, the way they raise their herd, etc., etc. But the cheese is like the emperor who had no clothes. When compared, say, with Cato Corner - Cato Corner is consistently good. And I believe more reasonably priced.
