Black Eyed Peas ~Tasso

So, I was watching some cooking show and the chef (female) made black eyed peas that she toasted in a frying pan and did some other things to them, I can't remember, but it looked like a tasty treat. Well now I can't find ANY such recipe, but I somehow still continue to think I want them, never had them but I want 'em.

I have a hunk of Tasso ham that's been in my freezer for 2 months.
I used the missing portion in a red-eye type gravy that I served with shrimp & grits ( first time ever for this Yankee!!) I could do that again, I still have some of the killer stone-ground grits that we ordered online.... But the peas are singing my name.

Is Tasso a flavor that would go good with my b.e.p's?!?!
