Last night i was stuck in the house without access to transportation and had nothing fresh in the house so i decided to go through my pantry. Realizing i had black beans and rice i decided to go ahead and try it out for the first time. Having never made the dish before i pulled up a few recipes on line to get the logistics down and sort of made my own with what i had. It turned out really good but i was wondering if anyone had any really good recipes they would be willing to share.
Heres what i did:
I very finely chopped one small onion which i dumped into a tablespoon or so of olvie oil on medium low. I added pepper to this and cooked it down until it got a little browned and very mushy. To this i added a couple of cloves of chopped garlic, salt and paprika. When the garlic got fragrant i added a chopped largish tomato and cooked this down until it was really mushy. I then added a can of black beans with their liquid(which i tasted and wasnt too salty) and a cup of rice and a cup of water. I also added a generous ammount of crystal hot sauce, few dashes of maggi seasoning, some onion powder and some garlic maybe a half teaspoon of each. I cooked this until the liquid was mostly evaporated. I have to say for my first attempt it was good considering what i had.
What could i should i have done to make this better? If i had more items on hand these are the changes i would have made. I would have cooked the onions in rendered bacon fat if i had bacon or conversely if i had a leftover ham in the fridge i would have cooked the mixture with a fatty piece of ham broken up. Also if i had some red peppers i would have added them in before the tomatoes.
