Bitter herbs, fresh-laid eggs, and hot-cross buns

I love food traditions, especially those that have fallen into obscurity. These are Easter-related.

To welcome spring, you eat bitter herbs, in foods like spinach pies and chervil soup.

Eating an egg laid on Maundy Thursday is said to keep you well for a year. If you put herb sauce on it, you double your luck.

Hot-cross buns are made in memory of the dead and missing.

Anyone else have edible wives' tales?
