Bitter Citrus Juices - What to do?

alegramarcel | Apr 30, 201606:46 PM     4

I had this stroke of genius... I was juicing some extra kale to take a as kale shots (I had to use it up before it got wilted). And I happened to have a LOT of citrus on hand... so I thought "I'll juice some of this and use it for mocktails! It's going to be awesome."

But this is a JUICER juicer, not a CITRUS juicer, so it juiced the peel and all.

Okay folks... this stuff is BITTER! I have about 4 cups, about 1 cup each of blood orange, grapefruit, cara cara orange, and lime. Even with about equal part sugar and a LOT of sparkling water it is too bitter to enjoy.

Thoughts? Do I need to turn this into straight cocktails? Would that help balance it out? Just keep adding sugar?

Creative recipes to make? Like marmalade jelly or something? Marinade ideas that call for incredible amounts of zest?

Or do I just need to throw this stuff out...
