BITTER Artichokes

After a trip to Rome, I was anxious to make artichokes a la romana. I found a recipe in Patricia Wells "Trattoria" cookbok, and followed it, using Bianca Vergine Valdichiana as the wine base. I used baby artichokes, rather than the globe-type called for in the recipe. I just finished cooking them and they are incredibly bitter. Is there anything I can do to salvage them?
