Bierriería Doña Tita was recommended to us by one local and one frequent visitor from Ensenada. So off we went after our middling breakfast at Casa Marcelo.
Doña Tita's birria is estilo Jalisco.
When we shared that I had honed in on birria de borrego tatemada as a new thing for me, the visitor recommended the birria dorada here. We tried a half order that comes with corn tortillas, a cup of consomé, salsa and a tray of chopped onions and cilantro.
If what we were served is typical at Doña Tita, it beats me why anyone would recommend it. The birria dorada was deep-fried and dripping in smelly, stale oil. The shreds were not exactly crisp, more like tough, pointy shards of protein that lacerate the inside of your mouth. The consomé was fattier and far less complex than what we had enjoyed at El Cora.
To give it another chance, we ordered a taco of the regular birria. It was on the bland side with little seasoning and the texture of the meat was lean and cottony. What we can praise were the corn tortillas, some of the most flavorful ones of our visit.
The salsa was simple too, unfortunately.
