Saturday night I noticed Bing's Dumplings when I pulled into the parking lot at Ranch 99 in Fremont. The place was quite busy at 7:30pm. I put my name on the list and waited about 15 minutes for a table to open up.

Spicy wontons featured tasty pork and shrimp dumplings. However, the red chile oil lacked complexity.

The broth for Lanzhou noodles was on the weak side. The slices of beef shank were marbled with tendon and pretty tender, if underseasoned. The noodles were a shade softer than I'd like. And again, the chile sauce tasted like it was missing something and was not that interesting.

The menu says that the noodles are hand-pulled. They're a bit wider than typical. I watched the man at the noodle station who was pulling the noodles. The dough was already portioned out in individual serving lengths, given only four final tugs and whacks, and then passed to the boiling station.

Bulk-binned frozen dumplings were counted out here for cooking. This same station was also used for wrapping dumplings that would then be frozen.

When I walked past several tables, the xiao long bao seemed to be the universal order here. While I was not entirely satisfied with either of the dishes I ordered, I might return to try the XLB. The restaurant also sells its dumplings frozen to cook at home.
