Everytime I've gone to Paris, I've missed a chance to go to one of those old fashioned brasseries. It seems like they're kind of dying out, or being taken over by corporations and having the life sucked out of them. Where is it still a worthwhile place to get a big plate of choucroute or fruits de mer while taking in the history and ambiance of the location?
Another question is, what is more traditional to wash down the food with? A wine from Alsace or a beer?
