then stiffs the waiter! I've seen this so much in my career and I always find it extremely interesting. There are some people - usually men, I call them "Mr. Big Deal" - who are always trying to impress and are quick to pay for the entire bill. However, their guests can't see how much they leave for the waiter, so this is an easy way for them to save a few dollars.
I have one such man who comes in on a semi-regular basis, and I've just learned to give him the 8% service I know that I'm going to receive. Don't get me wrong, I'm a professional, so I'm always courteous to him and his guests, but I don't go out of my way to do anything extra. I open his wine for him, but I don't continue to pour wine after the initial first pour. I'm polite, but I do not go out of my way to be jovial and entertaining - I save that for the table next to him, just to let him see what he's missing! :-) It's a little game I play. This man in particular likes to act like he's our favourite customer, and he always tells his guests (different people every time) how often he dines there and how he's "like one of the family." Ya, right! He's the relative that elicits the *check the call display* when the phone rings, just to make sure. LOL!
