This evening, after a family reunion, we made a slight detour to Decatur, AL, to check out Big Bob Gibson's BBQ. Stopped to ask directions at a gas station, and we received a Chamber of Commerce-style intro to the place, as well as a rave review from the clerk. Sounded promising.
When we arrived at the place, on US Hwy 31, we noticed the sign said "MIM Grand Champion 2000." For the uninitiated, MIM is Memphis In May, one of the premier BBQ contests. Another good omen.
When we walked in, the kitchen was almost in sight, and the smell made me really want to head in that direction. My husband didn't think that was a good idea, so we sat down instead. The place was full of folks chowing down on lucious-looking food...BBQ, ribs, and chicken. Three bottles of sauce were on the table...a thin, orange one which I decided looked lethal, a red one, which upon sniffing, I decided wasn't sweet enough (hey, I grew up on Memphis-style sauce!), and a white one, which smelled very interesting.
After I'd decided on the 1/4 white meat chicken and BBQ pork plate, I asked the folks at a neighboring table what their favorite food was at Gibson's. "Chicken, with lots of the white sauce!" Aha! Yet another good omen!
Service was informative and professional. They were out of potato salad, so I opted for beans and potato chips, my husband for beans and slaw. I'd seen the slaw and knew that it wasn't my kind...finely chopped with a vinegar-sugar dressing. I prefer a mayonnaise-based slaw.
Asked for the pork with some of the outside brown, yummy stuff...remember, "Ask and you shall receive." The pork was pulled, large pieces, each with delectable outside brown. It was, without a doubt, the best BBQ I've ever eaten. BTW, the red sauce that I'd proclaimed as not sweet enough was perfect for the meat. Old Bob knows what he's doing.
The only thing better than the pork had to be the chicken! Well, maybe it was only just as good as the pork. Especially good were the wings, crispy and brown, and full of smoky flavor. I tried the white sauce, but was disappointed in it. The only description I can think of for it was "raw-tasting." Others love it, but it's just not my cup of tea.
