any Bhutan updates?

B and I are heading to Bhutan in about a month. Of course, we have do the mandatory guided tour and our meals are planned out already (mostly hotel fare). Should we dread the meals and go out on our own (we've asked our tour guide about this and he wrote back that the places included in our package are local, excellent places - which I kinda believe - but that we can venture out on our own)? Our "group" consists of only the two of us and our guide. Are there any must-do eating experiences that might be outside the scope of the usual tour? I want me some real ema datse!

(BTW, one the Bhutan hits I got on here was from Sam I Am and I got a lump in my throat....)
