Bell pepper recipe to preserve/freeze?

I have a backlog of bell peppers -- mostly red -- from my CSA and if I don't use them soon they are going to end up in the compost. Any recommendations for a relish/preserve/freezer-friendly recipe to use them up? I am not really up for the effort of roasting and skinning them, so was hoping to do something from raw or at least easier than roasting. Any suggestions would be appreciated!
