This posted recipe intrigued me- I love beets. Here is my version.
I cut up 3/4 of a bag of Melissas' cooked beets and sauteed in a healthy pat of butter- added w/w penne pasta- cooked. Added white wine- tiny cherry tomatoes- a little fresh pineapple juice-a big handfull of spinach-a good pinch of kosher salt- a spin of pomegranate syrup and a shot of crushed red chili flakes. Had cooked some breasts- marintaed in Kens Low Calorie Red Raspberry dressing- sliced and added.
Opened lid- added toasted pine nuts, and a little goat cheese.
YUM. Served with TJ's Middle Eastern Flat Bread and a bottle of Syrah.
