We still are getting beets from our CSA and I had a beet soup for lunch at a local cafe. This was sort of weird and I don't really think i liked it all that much. It was a vegetable broth with chunks of beet, carrot, onion. The broth tasted rather sweet and the beets were rendered flavorless. Not so good.
However, I'd like to use my beets for more than just slices in my salad. What do you all recommend that isn't cream-based, nor like borscht?
