Beet Roesti with Rosemary

I made this recipe tonight (linked below). Wow, it was fantastic! The outside had a nice crunchiness and the inside was a bit too wet, but it tasted great. I highly recommend it, but I made it in a 9 inch skillet and used about 1 1/2 lbs of beets, and it took about twice as long to cook as the recipe states. 2 of us ate this with soup and it made a satisfying dinner.
