I found some beautiful organic orange beets in the market today. I love beets of all kinds, and decided to add them to my stew.....hubby hates red beets in stew; doesn't like the color, but he'll tolorate these. They were delicious, but as I was preparing them I felt really guilty as I chopped off and discarded the greens...which were beautiful and leafy, btw. It made me wonder...are beet greens edible? I can't imagine why they wouldn't be? Any ideas on how to serve????
