Mentioned to a co -worker yesterday yes I would like to have some of her home grown beets. Much to my surprise she brought in 200# pounds of the burgundy orbs. I boiled and skinned about 50# today. Has anyone froze the cooked ones before? will the structure of the beet break down like frozen cooked potatoes?
Also any ideas what to do with them other than the obiviuos Mashed, creamed, pickled, or borscht thing?
Since today I'm finding people love them or hate them. its coming in at 50-50 so far. I know my husband hates them. I just hate to see them go to waste. I know my co-worker thinks this is a riot. Guess you've got to be careful what you ask for sometimes!
