I have about a pound and a half of organic beef heart, and was thinking of making ravioli with caramelized onions, spinach, and scallions. Not so creative, I know, but it's the only thing other than anticuchos that I could think of. Any input? What else could I do with this hunk of meat? What flavors would work here? I'm a bit hesitant to include cheese since it may fight with the flavor of beef, but any suggestions are very much appreciated!
