Bean flours

So I just got my flour mill and am enjoying turning all types of things into powder... today I made some great falafel/onion bhaji type things out of some freshly milled chickpea flours.

Does anyone have favorite recipes using obscure bean flours? I now have a complete library of beans, and I'm ready to grind 'em all...

BTW - In my view a grain mill is the most "underowned" foodie appliance out there. It gives you so many interesting options you don't otherwise have (from truly fresh 100% whole wheat bread, to many obscure flours on demand, to...) Plus whole grains store very well for a long period of time, so it's easy to keep many on hand.
