Has anyone tried Rick Bayless' fried plantain fritters stuffed with cheese? I tried the recipe and strangely had a complete catastrophe. The recipe calls for yellow-black (not completely mushy plantains) to be sliced lengthwise and crosswise and then baked until soft (to be mixed with flour as a dough). I tried this, but rather than becoming soft, the plantains dried out and became hard. Any tips? Has anyone succeeded with this recipe?
