I will be visiting New Orleans for the first time this Friday for the weekend so I started checking out this board last week. I thought I was fairly educated when it comes to different cuisine but I found that I didn't know half the dishes discussed here. Please help me with the basics. What is boudin? What is the difference between the white kind and the red kind? What is Cracklin? How should these food be prepared? What else should I try when it comes to the local dishes? I went through this board and the citysearch web site so I have picked out some restaurants already.
