Wondering if anyone has made Ina Garten's Roasted Turkey for T-day before? Seen two variations on this--one that was on her show/cookbook and is a white truffle butter and the other is a cheaper variation that appears in Southern Living this month (herb butter instead of the truffles)
I have always been very pleased with her recipes for everyday meals and am considering deviating from the method my mother has used for approx 30 years (the Silver Palate cheese cloth and basting every 30 minutes). The SP way has always come out great, and mom has offered to manage the Turkey again, but as I take over the holiday (this is the second year we will have in our home) I would love to have something just as good (better, perhaps) but with less stress/effort of lifting a hot turkey out of the oven every 30 minutes or so. (Have a toddler plus another on the way, so simplicity is key in the next several years).
I ordered a high quality, fresh bird and do not plan to brine. Realize I should have gone with kosher bird, but will do so next year.
