Guys, I'm reeling here from the cake failure I just had. I'm a pretty good baker, and given a good recipe usually don't have too many disasters. Now I don't know if the recipe was the problem, or the fact that I slightly altered it, but I just made an upside down banana cake that tastes like some sort of dry cake/irish soda bread hybrid.

The only change I made was to add half a mashed banana to the cake batter itself. I thought about subbing in banana for butter, but instead just left the recipe as is and added the banana.
What I wound up with was a slightly dry, hole-y cake that tastes somewhat salty. I have NO idea whether it's the recipe, the banana, or something else I messed up along the way.
Any thoughts? And while I'm at it, anyone have any better banana cake recipes they'd suggest?
