Balloon Whisk, Reimagined

The balloon whisk has been reimagined as a flat, traverse whisk . Milk Street sat down the folks at Kuhn Rikon (Switzerland) two years ago and started working on the design. Here's the concept. To incorporate air quickly into egg whites or heavy cream you want to agitate as much as possible. To do this, move the whisk back and forth and not in a circular fashion.
