I have a set of six single-serve sized copper gratin pans that I haven't used in a while and I thought it'd be pretty if I made tonight's salmon in the gratin pans with each person getting their own pan and serving that along side the plate of veggies and rice. I know you can cook in copper as long as there's food in it but I don't know how much food. I was wondering if I could cook something like salmon that doesn't take up the entire pan like a gratin would. I would cook it with a little olive oil, some spices, and some lemon slices so the sides would not be covered by food.
