Mr. Zito - who took over from his uncle, Charlie Zito, who died in 1998 - said there was no one reason for the closing. He said the landlord had wanted a rent increase, but that have been bearable. He said that coal prices had risen sharply lately - the oven in the basement burns coal - but that, by itself, was not enough to doom the bakery's profitability.

Another headache inducer for Mr. Zito was the carbohydrate reducer that drove people away from bread: the Atkins diet. "It really put a dent in our retail," he said. "Will it pass? Probably too late for me, but it will pass.''
