Baked Beans

I made some super-easy baked beans for the fourth that turned out so good I wanted to share the recipe with this site.

2 cups small white beans
1/4 lb salt pork
1 small onion in small dice
2 cloves garlic chopped fine
2-3 tsp dry mustard
1 tsp salt
4 Tbsp molasses
5 Tbsp dark brown sugar

Wash the beans, pick out any stones or other detritus, and cover with cold water. Soak overnight. Drain beans.

Preheat oven to 300 degrees F.

Score half the salt pork and place into the bottom of a heavy casserole dish or bean pot. Reserve the remaining salt pork. Mix the rest of the ingredients with enough warm water to cover the beans. Place beans in pot and cover with the water and flavorings. Score the remaining salt pork and place it on top. Cover the beans and place into the oven for six hours. Check often to keep them covered with water for the first four hours. Take the cover off for the last hour of cooking to allow the salt pork to crisp.
